Worldwide, the annual volume of plant food waste, excluding agricultural residues, is estimated at 400 million tons. The valorization of this unused biomass during processing would increase the sustainability of food production, and contribute to a lower ecological impact. The project INPROVE therefore targets new, innovative technologies for the processing of potatoes and vegetables (e.g. carrot, broccoli, cauliflower, salsify, celeriac peas and legumes).
Joren De Ryck discovered where proteins that had been injected by the bacteria were active in the plant's roots. Those proteins then make the plant sick. The method used is groundbreaking.
