Worldwide, the annual volume of plant food waste, excluding agricultural residues, is estimated at 400 million tons. The valorization of this unused biomass during processing would increase the sustainability of food production, and contribute to a lower ecological impact. The project INPROVE therefore targets new, innovative technologies for the processing of potatoes and vegetables (e.g. carrot, broccoli, cauliflower, salsify, celeriac peas and legumes).
During FTI Festival Week, ILVO demonstrated at the company Fructus (Cuvelier Group) in Borgloon how linked technology and research are creating multifaceted solutions against food waste.
